About Shaun
Originally from Yorkshire, Shaun honed his skills at The Mayfair Hotel in London and attended the Thames Valley University at Slough. Shaun’s love of the sea then took him to the Channel Islands where he soon became Jersey’s most renowned and accredited chef.
He has spent the majority of his career in Jersey, Channel Islands, and has held a Michelin star since 2005. After being named British Chef of the year in 2006 by the Independent, he shot to culinary fame in 2009 in BBC Two’s Great British Menu with his now famous ‘Treacle Tart’, and in 2010 launched his TV Series, ‘Island Feast’ accompanied by the cookbook ‘Seasoned Islands’.
In May 2013 he opened the highly anticipated ‘Ormer’ restaurant bringing a
sophisticated restaurant, bar and private dining venue to the centre of St. Helier, Jersey. The restaurant received a Michelin star only four months after opening and has since received 3AA Rosettes and won ‘Restaurant of the Year – Best Newcomer’ in the coveted Food and Travel magazine, 2014. In June 2017, Ormer Jersey was crowned ‘Fine Dine Restaurant of the Year’ at the inaugural Jersey Style Awards.
In March 2016, Shaun began his partnership with Flemings Mayfair Hotel. He was signed to the hotel as part of their £14 million refurbishment programme. His new restaurant within the hotel, Ormer Mayfair, launched with great fanfare in September 2016.
Shaun and Ormer Mayfair played a starring role in the 2017 Masterchef UK when the restaurant became a location for the programme. The contestants were put the test in the professional kitchen under Shaun’s careful guidance.
Shaun’s latest achievement is one of the most talked about openings in over 10 years, Grantley Hall. Shaun was introduced to the project in 2018 where he took on the role of Food and Beverage Consultant helping to create and bring vision to all of the dinning concepts – from designing all 5 kitchens and all of the back house operation areas to hand picking every single detail from glasses to all the various styles of crockery to fit with the concepts for all of the different food and beverage areas on site. Shaun also set up and actively runs the fine dining restaurant, Shaun Rankin at Grantley Hall.
